I Love Leftovers

Mostly I just want a new post to replace the previous at the head of the blog, so this is all I've got.

I really do love leftover night. I think those are the nights I can catch up with everything else. Last night we had panini sandwiches. I thought they were great and the leftovers even better (because I didn't have to cook!)

Anyway, if anyone wants an easy meal idea, here's what we did:

1. Cook two chicken breasts however you like--grill, boil, bake--and then shred the chicken
2. Dice one onion and one red pepper
3. Saute onion and pepper in olive oil and garlic
4. Make pesto (or buy already prepared) either from fresh ingredients or from one of those packets
5. Toss the chicken with the peppers, onions, and pesto
6. Lightly butter (we used Smart Balance) two slices of bread (focaccia would be great, but we used homemade whole wheat and I thought it was fabulous too)
7. Place a slice of cheese (either Provolone or Mozzarella) on one of the slices of bread and then top with chicken mixture and the other slice of bread (buttered sides out)
8. Grill on George Foreman or other grill/panini maker

MMMMMM! My bro is professional at these sandwiches and he suggested a similar recipe with turkey, fresh mozza, tomatoes and pesto and THEN dip it in an olive oil/balsamic vinegar combo. Can't wait to try that. Pair this with some fruit and you've got a meal!

That sounds almost too gourmet but delicious! I wonder if my kids would eat it. It's worth a shot. By the way, we were told by other friends that we are officially old when a Saturday night date consists of going to the scout shop to by a new scout uniform. Real exciting...Chip is the scout master. I guess that means we don't have to wait one more year.
